Summer berry muffins

Ingredients

  • 2 cups mixed summer berries (strawberries, raspberries, blueberries etc) – you can use frozen
  • 3 cups wholemeal self-raising spelt flour
  • pinch of salt
  • ½ cup ground almonds
  • 1 tsp cinnamon
  • 2 oranges, zest and juice
  • 1 tsp vanilla essence
  • ½ cup honey
  • 1/3 cup apple juice concentrate or milk of choice
  • 1/4 cup extra virgin olive oil

Method

  • Sift flour and salt together in a large bowl.
  • Add oil, honey, apple juice concentrate (or milk) , ground almonds, cinnamon, orange juice and zest.
  • Add the berries and just combine.
  • Spoon into non-stick muffin tin and bake at 190°C for about 25-30 minutes.
