Pear-fection muffins


  • 2¼ cups oat-bran
  • 3tbsp brown sugar or stevia to replace sugar
  • 1tsp cinnamon
  • 1tsp baking powder
  • ½ cup rice, soy or almond milk
  • ½ cup apple juice
  • 2 eggs
  • 2tbsp olive oil
  • 1 large ripe pear


  1. Mix the dry ingredients in a large bowl.
  2. In a separate bowl, mix the milk, apple juice, eggs and oil. 
  3. Add wet ingredients to dry and mix well. 
  4. Add chopped pear and stir in gently. 
  5. Line muffin tins with paper baking cups and fill with mixture. 
  6. Bake in 220°C oven for 15min.
